Happy Friday! What a long time it’s been since I last posted… a few weeks, in fact. So many things have happened, so let’s get right into it…so we can get to the big announcement!
One | We went to Peru and Chile! That’s right! If you follow me on Instagram or we’re friends on Facebook, this isn’t news to you, but we spent 18 days on vacation in South America. In Peru, we visited Cusco, Ollantaytambo, Machu Picchu/Aguas Calientes, and Lima. Then, we headed to Chile, where we visited Easter Island, San Pedro de Atacama, and Santiago. Once I finish my Romania posts (erm, very overdue), I’ll recap this truly amazing trip.

Three | I’ve been slacking on my reading challenge – in that I haven’t read a single thing yet – so I’m going to try to get kickstarted. I’ve requested Fantastic Beasts and Where to Find Them from my local library – I’ve been meaning to read this for years, but simply never have. I’m thinking it probably be my “Book you can finish in a day,” but we’ll see how my attention span does…I’m not a fast reader.
Four | Over the weekend, I made Brown Butter Raspberry Pie Blondies from Food Fanatic, and they were phenomenal. I did make one change – instead of raspberry pie filling, I used raspberry preserves. Regardless, they were absolutely delicious, and I’m beginning to think that brown butter can make anything better (hello, granola).
Five | And last, but certainly not least… We got engaged! L proposed while we were hiking a volcano on Easter Island. Talk about the most romantic proposal I can possibly imagine. We’re still waiting for my ring to be resized, but here is a glimpse of the caldera from the overlook where he asked me to marry him. It’s been three weeks and I’m still giddy. He is going to be the best husband.
